Adding salt to boiled peanuts; when is best?

When do u add the salt? In the beginning of the directions it says to add salt, but 2/3 way down it says not to be tempted to add salt before peanuts are soft?


Also, I do not eat these but I wanted to make some with a 1 to 4 hour boiling window. How do I know they are cooked?

You can put the salt in at the beginning, but don't add MORE salt until the peanuts become soft, and wet inside the shell. The reason is that the peanuts cannot begin to absorb the salt water, and salty flavor UNTIL they become soft.

Salt to Start

You add your salt with the water and then add peanuts and start boiling. Only boil the peanuts only for about an hour; then taste for saltiness and texture of the nut. The longer you cook the peanuts, or if you leave them in the salt water, they will become soft and very salty. I prefer the nuts to slightly crunchy.
