Better Spicy Boiled Peanuts

Take green peanuts, rinse and place in pressure cooker. Take all the leftover jars of salsa from the fridge and dump it over the peanuts. Chop a medium onion, 4-10 garlic cloves, 2 raw cored and chopped jalapenos, throw into pressure cooker.


Mix up brine, using enough water to cover peanuts to the mark inside your pressure cooker, and salt enough to taste like sea water. Pour brine over the peanuts.

Follow directions on your pressure cooker. Try 45 minutes to 1 hour. I cooked them for 70 minutes and they were ALL soft and juicy.

Really delicious...cold or hot.

Your better spicy boiled peanuts recipe sounds delicious!

Pressure cookers are great for boiling peanuts. That's my preferred way to boil dried peanuts.

The amount of time to pressure boil peanuts takes some experimentation to render the softness you like. I like to pressure cook my peanuts about 1 hour, without salt.

The peanuts are still a bit firm, and this allows me to boil them further in the open pot, taste and decide when they almost done. Then I add the salt, as they complete their boiling in the open pot.
