Why did my raw peanut shells turn black when I boiled them?

Did you boil them this time of year or this past summer? Did they turn black as soon as you boiled them? They run out of water? Were they green or dry?

You either boiled the peanuts in a cast iron pot that needs re-seasoned or too much iron in the water.

Could someone please explain why the peanuts turned black? How do you re-season a cooking pot?
Could the iodized salt turn the peanuts black?

Black boiled peanuts

Mine turned black and tasted burnt first time because I thought I had raw peanuts. Turns out they were roasted nuts already. Looked raw to me, but they were not. Talk about a bummer. At the time couldn't buy raw or green nuts in KC MO. Now you can.

Cup of sugar

Cup of sugar in 5lbs of boiling peanuts make them awesome, Gotta try it. Add your salt as usual & then the sugar also. Works best with extra large peanuts. The best. I have a local guy who just started selling boiled peanuts in my area. He calls his gourmet peanuts. He adds pineapple,carrots,celery,sugar,chicken broth & other ingredients. They are amazing peanuts. He made lemon pepper last week & they were awesome too.

it turns purple due to iron leeching and reacting with the peanuts.
