I soak my peanuts before I boil them, usually 1 hour with a heavy lid and a couple of bricks on top. You want to submerge the peanuts. This also washes them. After they have soaked for awhile, even over night is better, take them out and transfer them to your pot. I make 20 lbs beings I sell them. Now fill your pot up with fresh water with 1 cup of pickling salt or kosher or sea salt. Add your favorite spices bring to a boil and slow boil until there cooked to your liking. ENJOY!
