Cold storage of Boiled Peanuts

by George
(Atlanta, GA)

I boiled a half bushel Tuesday. I brought temp down and then put in a small fridge to cool and store for a couple days. I checked on them tonight, a bit over 40 hrs, and noticed the refrigerator stopped at 50 degrees. Is this a problem? Are these still safe?

Keeping them Cold

George,
Better safe than sorry, throw them out. The USDA food temperature danger zone is between 40°F and 140°F.
