Event Advice - Boiled Peanuts

I've been serving up Boiled peanuts for a year now and we were recently asked to work our counties Fair! It will be a 10 day event and I'm open to any advice or tips on how to make an event of this size and length run smoothly. We have a concession trailer that we sell out of. I know I'll need to pre cook and freeze as many as I can but I'm worried about the time it takes to boil each batch off. 10 days with 10s of thousands of people is going to be a wild ride. What says y'all?

10's of thousands potential customers? Wow! I wish you the best of luck.

I am in a similar situation. I have a trailer set up with 2 - 60 Gallon steam kettles and a huge square stainless tank. I live in GA. I have a friend who wants me to supply peanuts at the 135th Neshoba County Fair in Philadelphia, MS. At this event, I would guess they have over 100K visitors over 8 days.



I am not brave enough to take on such a venture ... yet. Maybe one day.
