How to Store Green Peanuts?

by Gary Vasco
(Thibodaux, Louisiana)

I recently bought green peanuts from a store that keeps them in a cooler, 30 lbs sacks. When I get home do I have to boil right away? I want to store them, and boil when I want some.

Do I have to store them in the refrigerator, or can I store them in the house where they won't get wet?

Thanks,
Gary

Gary,
You must refrigerate, freeze, or boil green peanuts right away. If you do not, they will grow molds. Aspergillus flavus, and Aspergillus parasiticus are common molds found on green peanuts, which can produce aflatoxin when stored improperly.

Even refrigerated, green peanuts will spoil within 7 to 10 days. Freeze them for longer storage (several months).
