Over night storage when selling boiled peanuts the next day?

How do you store your boiled peanuts to sell the next day ? Say I was selling Saturday and have boiled peanuts left over, how would I store them that night to sell on Sunday ?

For food safety either refrigerate or freeze them.

Per the USDA "Bacteria grow most rapidly in the range of temperatures between 40 °F and 140 °F, doubling in number in as little as 20 minutes. This range of temperatures is often called the Danger Zone.

storing leftover peanuts for selling

WE sell peanuts at roadside stand in Florida and after we cook them we let them soak in fridge for 36 hours to absorb the flavor well.
Then after our day of selling we out them back into fridge, once the weekend is over and if we still have left over peanuts (which is rare) we then store them in Freezer until the next week. This is fine for a week one freeze but after that it would be time to pitch them, they would probably be fine but to be safe pitch them or leave out for squirrels (thats what we do) !
We have found that the storing time actually makes them even better ! So if you have the time to let them soak for 36 hours or more after cooking try it and i think you will agree! Happy Cooking boiled peanuts

Has anyone else seat with this? If it's very little, it's not going to spoil or mold fast... however, my theory... since it's brine and boiled, and if you take as much water off as possible.. this should allow longer shelf life. Even on a counter top. Least for a couple days. Let me know what y'all think or find . Thx
