Soaking Raw Jumbo Peanuts

by Dawn

I have been trying to get a firmer texture (not mushy) boiling jumbo raw peanuts. I've soaked them over 24 hours and they get too mushy inside and don't ever get salty. I've been told to cook them without any salt or seasoning until they are almost at the texture I want and then add salt and/or seasoning. Today, I'm trying to boil a batch without soaking since they keep getting too soft. When should I add the salt?

Making Boiled Peanuts Saltier and Firmer

If they are getting too soft prior to them getting salty enough then add the salt at the beginning of the boiling process. You may need also to add more salt per unit of water than you are currently using.

How much salt per gallon of water are you using?

Are you boiling green or dried peanuts?
